Pepe Pizzas

Ingredients
- Pepes (i.e. tortillas)
- Tomato sauce
- Shredded Cheese (mozzarella, cheddar, or a mix of both work best)
- Olive oil/cooking spray
- A selection of your favourite vegetables and toppings!
Directions
- Chop up any vegetables, and prep all other toppings (cook pepperoni if using any… crumble goat’s cheese, etc). Set toppings aside.
- Heat your pan, and add a little bit of olive oil or cooking spray so that your pizzas don’t stick/burn.
- Prepare each pizza according to preference. An assembly line with your friends works well here – one person spread the sauce on half of each pepe, pass it to the next to add the cheese, and each person can select their own toppings.
- Fold the prepared pepes in half, and set aside.
- GRILL TO PERFECTION — Cook each pizza for about 2-5 minutes, flipping once or twice (depending on how hot your fire is)
- When the outside is browning slightly and the cheese is melted, the pizza is ready to enjoy!
- Repeat as needed… after a hard day’s canoeing and portaging, even the tiniest campers have been known to eat as many as 8-10 pepe pizzas! They are a tripping favourite.
